  • 1 dozen eggs (large)
  • 1/3 cup mayo
  • 2 tablespoons mustard
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • Paprika or (smoked paprika) for garnish
  1. Boil the eggs: Place the eggs in a single layer in a saucepan. Cover with water, bring to a boil, then simmer for about 12 minutes ( for perfect eggs). Transfer the hard-boiled eggs to an ice water bath to cool before peeling.
  2. Peel and halve the eggs: Gently peel the eggs. Then cut the eggs in half lengthwise, removing the yolks to a separate bowl.
  3. Make the filling: Mash the yolks with a fork. Add the mayonnaise, Dijon, or yellow mustard, dill or sweet pickle relish, and a dash of salt and pepper. Mash until smooth.
