How does Panera make their bread? ›

Panera has Fresh Dough Facilities throughout the country where the dough is created. The dough is then delivered to the bakeries at night to be baked fresh the next morning, which is a pretty efficient process. However, while Panera boasts bakery-fresh bread, that doesn't mean all its food is up to that standard.

That Soup Isn't Made In-House

It may taste homemade, but that Panera soup wasn't actually prepared by the workers at your local shop. "The soups are made at a factory/plant/etc., flash-frozen, shipped to us, and we thaw it out in what's called a thermalizer, essentially a soup-thawer," says one former employee.

If you add cheese to your soup when it's too hot or boiling vigorously, it can become overcooked and develop a grainy or curdled texture rather than melting smoothly. To avoid this, reduce the heat to low or medium-low before adding the cheese.

All That Delicious Bread is Baked Fresh Daily

Panera employs over 6,000 bakers who make more than 250 million bagels and 50 million baguettes each year. Every night, fresh dough is delivered to all Panera locations from Fresh Dough Facilities across the country. So their bread is about as fresh as it gets.

While it is true that the crew at Panera does bake their bread on site, the dough isn't actually made from scratch at that same dine-in location. Prepared dough actually arrives every day via truck from a source close to the restaurant, and it may or may not be frozen.

So Panera bakes all their bread on site. Things are changing with time but they still have bakers on site. All the dough is shipped nightly to the store from a fresh dough facility in the area.
