Do you struggle to get enoughfish in your diet? I know I do, despite liking fish I never seem to remember to put it on our menu plan or shopping list. When I was asked to try some recipes from theNational Lottery Good Causes Food Champions website recently, the delicious easy salmon fishcakes I'm sharing with you today jumped out at me as a great recipe to help introduce more fish into our diets and perfect for growing kids!

Until I tried this recipe, I hadn't made fishcakes for years. I think my early cooking efforts included a very time consuming fishcakes recipe which put me off somewhat, but this recipe is very different, it's super quick to make and couldn't be easier! There's no precooking of ingredients required, just pop everything into a bowl, give it a good stir, then shape - so simple! You could even get the kids involved, as you'll see from the video below, it'd be a really great one for them to get stuck into.

Like the lovelyStrawberry and Greek Yogurt Smoothie I shared earlier this week, this recipe comes from a Paralympian, this time Neil Fachie. Neil, who is partially sighted, made his paralympic debut on the running track at the 2008 Beijing Olympics. He then switched sport in 2009, becoming a London 2012 Paralypic gold and silver medallist in para-cycling, riding in tandem with a sighted pilot. He is now a full time Lottery funded athlete based at the National Cycle Centre in Manchester.

Fachie's Fantastic Fishcakes

Ingredients:

  • 600g fresh salmon fillet
  • 1 clove of garlic
  • 1 tbsp capers
  • 1 tbsp fresh dill
  • pinch of salt
  • 1 tsp bicarbonate of soda
  • 1 tsp wholegrain mustard
  • lemon wedges to serve (optional)

Method:

Start by preparing the ingredients; remove the skin and any bones from the salmon fillet and finely chop, peel and finely chop the garlic, roughly chop the capers, finely chop the dill.

Place the chopped salmon in a large bowl and add the rest of the ingredients. Mix well to combine, then take handfuls of the mixture and shape into 8-10 fishcakes.

Place the fishcakes on a plate, cover with clingfilm and place them in the fridge for one hour. After an hour they should have firmed up and will be ready to cook.

Heat up a griddle pan and cook the fishcakes for about 2-3 minutes on each side until cooked through and golden.

Garnish with a little leftover dill and serve with lemon wedges to squeeze over. We enjoyed ours with homemade potato wedges and steamed vegetables, yum!

    Just made this and wow wow wow! I modified the recipe a touch- replaced capers with green onions, added about a tsp of mayo and I dipped the whole cake in egg then bread crumbs. AMAZING!
