Homemade Chocolate Syrup Recipe

In our quest to eat healthier/cleaner we tossed many many items into the trash. Chocolate syrup was one of the casualties, which made Emma & Ethan sad kidlets. They are addicted to their chocolate milk every morning. This made my mission even more important to find a cleaner healthier option for their morning pick me up. I found this recipe at Loving The Bike, which went on to mention the antioxidant properties in cocoa and organic honey.

So… I made a batch and the overall reaction was unanimous…. it was a hit! I have been making this as a double batch bi-weekly for about 6 weeks now. I do not foresee a time when we’ll stop as it’s that good.

Homemade Chocolate Syrup Recipe (1)

Ingredients

  • 1¼ C organic honey
  • 1 C unsweetened cocoa powder
  • 1 C water
  • ¼ tsp sea salt
  • 1 Tbsp vanilla extract
  • Dash of cinnamon (optional)

Instructions

  1. Put honey, cocoa powder, water and salt in a medium saucepan. If doubling this recipe, use a larger stock pot as it tends to foam up and expand before boiling.
  2. Cook over medium heat, whisking to remove lumps and to keep from burning. Bring to a boil so it will thicken for 2-3 minutes, all the while whisking to avoid burning.
  3. Remove from heat and allow to cool for 5-10 minutes before adding the vanilla.
  4. Add vanilla and cinnamon if you so choose.
  5. This will store in a fridge for up to 4 weeks... it probably won't last that long before disappearing though.
  6. My kids like their chocolate milk strong. For an 8 ounce glass we add 2-3 tablespoons of syrup.
  7. Nutrition information: (1 Tbsp chocolate syrup) 30 calories, 10 mg sodium, 8 gms carbohydrates, 1 gm protein

I am always looking for a different syrup to add to desserts. I just get tired of using Hershey’s syrup all the time. This is something I am interested in trying.

I’ve tossed products when I realized I had something with ingredients not good for you, even though I try to avoid acquiring them in the first place. Like chicken bouillon. Then to find a substitute can be a pain, so knowing how to make it yourself is great! I would like to make this, I have lots of honey on hand, and I like anything with chocolate! Great recipe!

I’m planning on making some chocolate creamed honey and that got me to thinking about chocolate syrup so I found your page looking for recipes. There are a couple things you may want to consider in your process. I wouldn’t bother with “organic” honey. Just find raw, unprocessed honey from a local beekeeper. Bees forage over a 2 – 3 mile radius so there is no way to truly have organic honey without controlling the use of a couple thousand acres. More importantly heating destroys all of the unique flavor, enzymes and antioxidants bees add to honey. Although it will kill any wild yeast which will prevent fermentation. But it doesn’t sound like you are keeping it long enough for that to be a concern. Why do you say it will only store for about 4 weeks and why in the fridge? Honey is best stored out of direct light at room temp. So basically in your kitchen cupboard. None of the other ingredients require refrigeration. What happens to it if not refrigerated? Do the ingredients separate?

I wondered about getting it thick enough, I know that’s why you boil it. It would be nice to find another way. But if all you are using it for is chocolate milk it does it have to be thick? You are adding water, so just add what is needed to get the consistency you want. You want it to go into solution with the milk anyway. Why not try skipping the boiling and see how that compares.

Sorry, but I alway cringe when I hear about people buying good honey and immediately destroying it by heating, particularly boiling.

I agree, why pay for local honey then boil away all that makes it so good for you. i will try John’s ideas. Thanks all

I’m not really sure about canning this? I usually just make enough to use for a week or two, then make a new batch. Sorry I wasn’t more of a help.

This can be made raw as well so the benefits of the honey aren’t destroyed. 1/2 cup honey, 1/4 cup coco powder, 1 1/2 tsp real vanilla, and a pinch of sea salt. just mix it all together and store it at room temperature in a recycled jar. =)
