I’m not sure if potlucks are popular everywhere, but in the circles I grew up in, they were a regular part of life. Church functions, family reunions, Super Bowl parties, even some cookouts were done in traditional potluck style, with guests each contributing a dish. It’s the perfect solution to feed a crowd. Plus, it gives everyone a veritable feast without putting all the work on a single host.

I’m so thankful that even today the potluck is a big part of my life. We have one at least once a month (more in the summertime) and they are one of my favorite things.

It is so exciting to get a peek into other people’s kitchens; seeing which recipes are their go-to, tried and true staples. So for a foodie snoop like me, potlucks are a dream come true.

A Potluck Classic

One of those potluck favorites is this easy cold spinach dip recipe. It surfaced at many different potlucks and church functions over the years and each time I was smitten. I found myself hanging around the table dipping hunk after hunk of bread into this cool, creamy concoction.

After several occasions of overstaying my welcome at the bread bowl, I finally decided to ask for the recipe. I was shocked when my friend told me it was the recipe on the back of the Knorr vegetable dip mix and that it was the easiest thing ever.

I’m always skeptical of recipes that come on the back of packaging, but this one did not disappoint. It’s extremely simple, takes only 10 minutes to prep, and yields a flavorful dip that’s irresistible with both bread and vegetables. You’ve got to love a spinach dip recipe that is basically fail proof, and always a hit with a crowd.

How to Serve Knorr Spinach Dip

Serving this spinach dip in a bread bowl is the typical method. Just be sure to choose a sturdy bread with a decent crust that will contain the dip well, and with a texture that will hold up to dipping. (*maybe even double-dipping if you are the monster at the party that can’t resist defiling the dip for the rest of us).

I prefer a sourdough loaf for this recipe because they’re easy to find in the store. For you aspiring bakers, if you want to earn some extra credit, try baking this sourdough bread recipe from Girl vs Dough.

I also recommend serving this Knorr spinach dip recipe in a pumpernickel loaf. The dark color and bold flavor of pumpernickel bread is a nice contrast to the cool dip.

  • Flatbreads like Pita or Naan
  • Pita Chips or Pretzel Chips
  • Melba Toast
  • Hearty Crackers (like Triscuits or Wheat Thins)

How Long Does Spinach Dip Last In the Fridge?

3-4 days. Cold spinach dip can be refrigerated in a sealed container, or covered in plastic wrap or foil. If you made your spinach dip in a bread bowl, the bread will get soggy and stale the longer it sits. The sour cream in your dip will tend to separate and get watery in the refrigerator, so most any spinach dip recipe is best enjoyed fresh.

How Do You Thicken Spinach Dip?

If your spinach dip is watery, thin, or separated:

  1. Give it a good stir.
  2. Then add a bit more cream cheese (or even some finely shredded cheese) to bring it back to life.
  3. As a last resort, you can mix in a small amount of cornstarch (½ tsp at a time).

Can You Freeze Spinach Dip?

Not recommended. Both sour cream and cream cheese are finicky about freezing temperature, and won’t retain their textures once thawed. The freezing/defrosting process also squashes the crispness of any vegetables in your spinach dip recipe.

You want the potluck-going public to be singing your praises, so remember the old Dutch saying that “fresht is besht.”

Knorr Spinach Dip Recipe

Yield: 4 cups

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients

  • 12 ounce bag frozen chopped spinach
  • 1 cup mayonnaise (I used olive oil mayo)
  • 1 (16 ounce) container sour cream
  • 1 packet Knorr vegetable recipe mix
  • 3 chopped green onions
  • 1 large round sourdough or pumpernickel loaf

Instructions

  1. Cook the spinach in the microwave or stove top, according to package directions. Drain the spinach, then use paper towels to squeeze out any excess moisture.
  2. In a large bowl, combine the drained spinach, mayo, sour cream, vegetable mix, and green onions. Stir until well combined. Refrigerate for 2 hours or until ready to serve.
  3. When ready to serve, use a knife to cut out the center of the loaf of bread, leaving about a half inch around the sides and the bottom. Spoon the dip into the center of the loaf, then cut the remaining bread into cubes for dipping. This dip is also great with cut veggies.
